Crispy Tofu Noodle Bowl with Peanut Sauce

Ingredients (Serves 1)

  • 50 g rice noodles (about 1.8 oz)
  • 100 g tofu (about 3.5 oz)
  • A handful of red cabbage, chopped
  • 1 small carrot, grated or julienned
  • A few cucumber slices
  • 1/4 red bell pepper, sliced
  • 1/4 cup edamame
  • Chives, chopped
  • 1/4 chili pepper, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon oil, for frying
  • A few peanuts, chopped

Peanut Sauce:

  • 2 generous tablespoons peanut butter
  • Juice of 1/2 lime
  • 1 tablespoon soy sauce
  • Salt, to taste

Instructions

Cook the rice noodles according to package instructions. Drain and toss with sesame oil to prevent sticking.

Heat oil in a pan over medium heat. Slice the tofu and fry until golden and crispy on both sides.
