Made a batch of lentil bolognese? Don’t just serve it with pasta.

These bolognese stuffed baked potatoes are one of my favorite ways to turn leftover Veggie-Packed Lentil Bolognese into a completely different meal.

Crispy-skinned baked potatoes are split open, filled with warm lentil and vegetable bolognese, and topped with grated cheese. It’s simple, comforting, and requires very little extra prep—especially if the sauce is already waiting in your fridge.

Cook Once, Make Two Different Dinners

This is one of those recipes that’s less about cooking something completely new and more about making what you’ve already cooked work harder.

Make a batch of Veggie-Packed Lentil Spaghetti Bolognese and serve it with pasta for dinner.

Then save some of the sauce.

The next day, bake a few potatoes, reheat the bolognese, add cheese, and you’ve got a meal that feels completely different without making another dinner from scratch.

Dinner 1: Lentil Spaghetti Bolognese
Dinner 2: Bolognese Stuffed Baked Potatoes

That’s the kind of meal planning I actually find useful: not eating exactly the same leftovers for three days, but turning one prepared component into different meals.

Why Bake Potatoes Without Foil?

There’s no need to wrap the potatoes in foil.

Rubbing them with olive oil and baking them uncovered allows the skins to become much crispier, while the inside stays soft and fluffy.

Pricking them with a fork before baking also allows steam to escape as they cook.

Make Them Even Better

The basic combination of potato + bolognese + cheese is already enough for a satisfying dinner, but you can add whatever you have in the fridge.

Try topping them with:

  • Sour cream or Greek yogurt
  • Chopped spring onions
  • Fresh parsley
  • Jalapeños
  • Avocado
  • Crumbled feta
  • Chili flakes
  • Fresh arugula

A simple green salad on the side is all you need to turn them into a complete dinner.

Can I Make These with Leftover Bolognese?

Absolutely—and that’s actually the best reason to make them.

Keep leftover lentil bolognese in an airtight container in the refrigerator, then simply reheat the amount you need while the potatoes are baking.

You can even bake the potatoes ahead of time and reheat them when you’re ready to eat.

More Ways to Use Lentil Bolognese

Once you’ve made a good vegetarian bolognese, spaghetti is only the beginning.

Use leftover sauce for:

  • Baked potatoes
  • Lasagna
  • Pasta bakes
  • Stuffed peppers
  • Grain bowls
  • Toast
  • Wraps

Thinking about sauces and other components this way makes it much easier to create different meals without constantly searching for completely new recipes.

Stop Starting Dinner From Scratch

Meal planning doesn’t have to mean preparing seven completely different dinners every week.

Sometimes it’s much easier to make one useful component and find two ways to serve it.

A pot of veggie-packed lentil bolognese can become spaghetti one evening and cheesy stuffed baked potatoes the next.

Less planning, less cooking—and you still don’t feel like you’re eating the exact same meal twice.

Bolognese Stuffed Baked Potatoes

Prep Time 5 minutes
Cook Time 1 hour
Total Time 1 hour 5 minutes
Servings: 2
Course: Main Course

Ingredients

  • 4 medium baking potatoes
  • about 2 cups Veggie-Packed Lentil Bolognese linked below
  • 1-2 tbsp olive oil
  • 1/2-1 cup grated cheese such as cheddar
  • salt to taste

Method

Bake the Potatoes
  1. Preheat the oven to 200°C / 400°F.
  2. Scrub the potatoes thoroughly under running water. There’s no need to peel them—the skin becomes deliciously crisp in the oven.
  3. Pat the potatoes dry and prick them several times with a fork.
  4. Rub each potato with a little olive oil and sprinkle lightly with salt.
  5. Place the potatoes directly on an oven rack or arrange them on a baking sheet.
  6. Bake for approximately 1 hour, or until the potatoes are completely tender inside and the skins are crisp.
  7. Larger potatoes may need a little longer, so check them by inserting a knife into the center.
Heat the Bolognese
  1. While the potatoes finish baking, reheat the Veggie-Packed Lentil Bolognese in a small saucepan or skillet.
  2. If the sauce has become very thick in the fridge, add a splash of water while reheating.
Fill the Potatoes
  1. Remove the baked potatoes from the oven.
  2. Carefully cut each potato open lengthwise without cutting all the way through.
  3. Gently press the sides to open up the center and fluff the potato flesh slightly with a fork.
  4. Spoon plenty of warm lentil bolognese into each potato.
Add the Cheese
  1. Finish with a generous handful of grated cheese.
  2. The heat from the potatoes and bolognese will start melting the cheese immediately.
  3. If you want the cheese extra melty and golden, return the filled potatoes to the oven for another 5–10 minutes, or place them briefly under the broiler.
  4. Serve hot.
