The Easiest Peanut Sauce

You don’t need a long list of ingredients to make a good peanut noodle sauce.

For this version, all you need is:

peanut butter + soy sauce + lime + chili + water

The peanut butter makes it creamy, soy sauce adds savory flavor, lime brings freshness, and chili adds just enough heat.

It’s an incredibly useful sauce to know because you can use it with much more than noodles.

Try it with:

  • Rice bowls
  • Crispy tofu
  • Roasted vegetables
  • Stir-fries
  • Spring rolls
  • Grain bowls

Make One Recipe, Turn It Into Another Meal

This is exactly why I love keeping simple meal components in the fridge.

Make a batch of The Best Pan-Fried Broccoli with Garlic and Soy Sauce and serve some of it as a side dish.

Then use the leftovers to make these peanut noodles the next day.

One simple vegetable recipe suddenly becomes the starting point for several different meals—and you don’t have to figure out what to cook from scratch every evening.

Easy Add-Ins

Want to make the noodles even more filling? Add:

  • Crispy tofu
  • Edamame
  • Shredded carrots
  • Red cabbage
  • Spring onions
  • Sesame seeds
  • Chopped peanuts
  • Fresh cilantro

For extra heat, finish with sriracha or additional chili flakes.

Add Tofu for Extra Protein

For a more substantial dinner, crispy tofu would be my first choice.

Cut firm tofu into cubes and pan-fry until golden, then add it to the noodles along with the broccoli.

You could also use edamame if you want something that requires almost no extra preparation.

Total Time 25 minutes
Servings: 2
Course: Main Course
Cuisine: Asian

Ingredients

For the Noodles
  • 150 g noodles about 5.3 oz
  • 1 batch The Best Pan-Fried Broccoli with Garlic and Soy Sauce linked below
Peanut Butter Sauce
  • 1 cup water
  • 3 heaped tablespoons unsweetened peanut butter
  • 2 tbsp soy sauce
  • a pinch of chili flakes
  • juice of 1/2 lime
  • salt if needed

Method

Prepare the Broccoli
  1. Prepare the Garlic Stir-Fry Broccoli according to the recipe.
  2. The broccoli is cooked in a skillet with sliced garlic, chili, soy sauce, and a little water until tender but still slightly firm.
  3. If you already have leftover stir-fry broccoli in the fridge, even better—simply reheat it while preparing the noodles.
Cook the Noodles
  1. Cook the noodles according to the package instructions.
  2. Drain and set aside.
Make the Peanut Butter Sauce
  1. Pour 1 cup of water into a small saucepan and bring to a gentle boil.
  2. Add the peanut butter, soy sauce, chili flakes, and lime juice.
  3. Whisk continuously until the peanut butter has completely incorporated into the water and the sauce becomes smooth and creamy.
  4. Check the consistency.
  5. If the sauce is too thin, whisk in a little more peanut butter.
  6. If it’s too thick, add a splash of water.
  7. It’s better to keep the sauce slightly on the thinner side at this stage—the noodles will absorb some of it once everything is mixed together.
  8. Taste and add salt if necessary, especially if you’re using unsalted peanut butter.
Put It All Together
  1. Add the cooked noodles to the peanut sauce and toss until they’re completely coated.
  2. Divide between bowls and top with plenty of warm garlic stir-fry broccoli.
  3. Serve immediately.
