Peanut Butter Noodles with Garlic Stir-Fry Broccoli

Ingredients
  

For the Noodles
  • 150 g noodles about 5.3 oz
  • 1 batch The Best Pan-Fried Broccoli with Garlic and Soy Sauce linked below
Peanut Butter Sauce
  • 1 cup water
  • 3 heaped tablespoons unsweetened peanut butter
  • 2 tbsp soy sauce
  • a pinch of chili flakes
  • juice of 1/2 lime
  • salt if needed

Method
 

Prepare the Broccoli
  1. Prepare the Garlic Stir-Fry Broccoli according to the recipe.
  2. The broccoli is cooked in a skillet with sliced garlic, chili, soy sauce, and a little water until tender but still slightly firm.
  3. If you already have leftover stir-fry broccoli in the fridge, even better—simply reheat it while preparing the noodles.
Cook the Noodles
  1. Cook the noodles according to the package instructions.
  2. Drain and set aside.
Make the Peanut Butter Sauce
  1. Pour 1 cup of water into a small saucepan and bring to a gentle boil.
  2. Add the peanut butter, soy sauce, chili flakes, and lime juice.
  3. Whisk continuously until the peanut butter has completely incorporated into the water and the sauce becomes smooth and creamy.
  4. Check the consistency.
  5. If the sauce is too thin, whisk in a little more peanut butter.
  6. If it's too thick, add a splash of water.
  7. It's better to keep the sauce slightly on the thinner side at this stage—the noodles will absorb some of it once everything is mixed together.
  8. Taste and add salt if necessary, especially if you're using unsalted peanut butter.
Put It All Together
  1. Add the cooked noodles to the peanut sauce and toss until they're completely coated.
  2. Divide between bowls and top with plenty of warm garlic stir-fry broccoli.
  3. Serve immediately.
