Method
Prepare the Broccoli
- Prepare the Garlic Stir-Fry Broccoli according to the recipe.
- The broccoli is cooked in a skillet with sliced garlic, chili, soy sauce, and a little water until tender but still slightly firm.
- If you already have leftover stir-fry broccoli in the fridge, even better—simply reheat it while preparing the noodles.
Cook the Noodles
- Cook the noodles according to the package instructions.
- Drain and set aside.
Make the Peanut Butter Sauce
- Pour 1 cup of water into a small saucepan and bring to a gentle boil.
- Add the peanut butter, soy sauce, chili flakes, and lime juice.
- Whisk continuously until the peanut butter has completely incorporated into the water and the sauce becomes smooth and creamy.
- Check the consistency.
- If the sauce is too thin, whisk in a little more peanut butter.
- If it's too thick, add a splash of water.
- It's better to keep the sauce slightly on the thinner side at this stage—the noodles will absorb some of it once everything is mixed together.
- Taste and add salt if necessary, especially if you're using unsalted peanut butter.
Put It All Together
- Add the cooked noodles to the peanut sauce and toss until they're completely coated.
- Divide between bowls and top with plenty of warm garlic stir-fry broccoli.
- Serve immediately.
