Ingredients
  

Bowl
  • 5 falafel homemade or store-bought
  • 1/2 cup cooked rice
  • a handful of fresh spinach
  • a few slices of cooked or roasted beetroot
  • 3 cherry tomatoes halved
  • a few slices of cucumber
  • a piece of bell pepper sliced
  • a few olives
  • a few cubes of feta cheese or vegan feta
Tahini sauce
  • 1 tablespoon tahini
  • juice of 1/2 lime
  • 1/2 garlic clove crushed
  • salt to taste
  • a little water to thin

Method
 

  1. Arrange the rice, spinach, falafel, and all the vegetables in a bowl.
  2. In a small bowl, whisk together tahini, lime juice, garlic, and salt until smooth and creamy. Add a little water as needed to reach your desired consistency.
