Vegan Sunflower Seed Cottage Cheese with Radishes and Chives (Easy No-Cook Spread)
Ingredients
- 300 g sunflower seeds (about 2 cups)
- water
- 1 bunch of radishes, grated
- 1 bunch of chives, finely chopped
- 2 teaspoons black salt (kala namak), or to taste
- a pinch of black pepper
- 1/4 teaspoon turmeric
Instructions
Rinse the sunflower seeds using a sieve, then transfer them to a bowl. Add enough water so it sits about 1 cm (½ inch) above the seeds. Let soak for at least 15 minutes, or up to overnight.
Meanwhile, grate the radishes using the coarse side of a grater and finely chop the chives.
Blend the soaked sunflower seeds until smooth—do not drain them. Some of the water will be absorbed, and the rest will help create a creamy texture.
Add the grated radishes, chopped chives, black salt, pepper, and turmeric. Mix well until fully combined.
