Apple Pie Overnight Oats

Ingredients
  

  • 200 g plain or Greek yogurt about 3/4–1 cup
  • 1/2 cup milk or plant-based milk
  • 1/4 cup rolled oats
  • 2 tbsp chia seeds
  • 1 small apple
  • 1/2 tsp cinnamon
  • 5 dates chopped
  • 1 cookie or digestive biscuit crushed
  • maple syrup for serving

Method
 

  1. In a bowl, mix together the yogurt, milk, oats, chia seeds, cinnamon, and chopped dates.
  2. Cut the apple into small cubes or grate it coarsely.
  3. Place the apple at the bottom of a jar.
  4. Pour the oat mixture over the apples.
  5. Top with crushed cookie crumbs and drizzle with maple syrup.
  6. Cover and refrigerate overnight (or for at least 4–6 hours).
