Banana Bread Overnight Oats

Ingredients
  

  • 200 g plain or Greek yogurt about 3/4–1 cup
  • 1/2 cup milk or plant-based milk
  • 1/4 cup rolled oats
  • 1 tbsp peanut butter
  • a handful of walnuts chopped
  • 1 ripe banana
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 2 squares dark chocolate chopped

Method
 

  1. Mash half of the banana with a fork and spread it on the bottom of a jar. Slice the remaining half for topping.
  2. In a bowl, mix the yogurt, milk, oats, peanut butter, cinnamon, vanilla extract, and chopped walnuts until well combined.
  3. Transfer the mixture to the jar over the banana layer.
  4. Top with sliced banana and chopped dark chocolate.
  5. Cover and refrigerate overnight (or at least 4–6 hours).
