Crispy Zucchini Fritters with Garlic Yogurt Sauce

Ingredients
  

Zucchini Fritters
  • 2 medium zucchini about 600 g / 1.3 lb, grated
  • 4 eggs
  • 140 g all-purpose flour about 1 cup + 2 tablespoons
  • 1 handful fresh dill finely chopped
  • 1 tsp salt
  • vegetable oil for frying
Garlic Yogurt Sauce
  • 4 tbsp plain Greek yogurt or natural yogurt
  • 2 tbsp mayonnaise
  • 2 garlic cloves minced
  • 1 handful fresh dill finely chopped
  • salt to taste

Method
 

  1. Grate the zucchini using the coarse side of a box grater.
  2. Sprinkle with the salt and let it sit for 10 minutes.
  3. Transfer the zucchini to a sieve and gently squeeze out the excess liquid. There's no need to remove every drop—leaving a little moisture helps keep the fritters tender.
  4. Place the zucchini in a large mixing bowl.
  5. Beat the eggs lightly with a fork and add them to the zucchini along with the flour and chopped dill.
  6. Mix until everything is well combined.
  7. Heat a generous layer of oil in a large frying pan over medium heat.
  8. Spoon portions of the batter into the pan, gently flattening them into small fritters.
  9. Cook for about 3–4 minutes per side, or until golden brown and crispy.
  10. Meanwhile, prepare the sauce.
  11. In a small bowl, combine the yogurt and mayonnaise.
  12. Stir in the minced garlic, chopped dill, and a pinch of salt.
  13. Serve the warm zucchini fritters with the garlic yogurt sauce.
