Easy Vegan Chili with Beans and Lentils

Ingredients
  

  • 2 cans red kidney beans drained and rinsed
  • 1 can white beans drained and rinsed
  • 1/3 cup red lentils
  • 2 cans chopped tomatoes
  • 1 onion diced
  • 2 tbsp olive oil
  • 1 red bell pepper diced
  • 2 tsp sweet paprika
  • 2 tsp smoked paprika
  • 1/2 tsp chili powder or to taste
  • 1 tsp ground coriander
  • a pinch of cinnamon
  • 2 tbsp soy sauce
  • salt to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté for about 2 minutes, until softened. Add the diced red pepper and cook for another minute.
  3. Rinse the lentils and add them to the pot. Pour in about 2/3 cup of water, add a pinch of salt, cover, and cook until the lentils are tender and have absorbed the liquid.
  4. Add the chopped tomatoes, red beans, and white beans. Stir in all the spices and soy sauce.
  5. Bring to a simmer and cook for about 10 minutes, stirring occasionally to prevent sticking.
  6. Taste and adjust seasoning if needed.
