Easy Falafel Quinoa Bowl with Green Sauce
Ingredients (Serves 2)
- 1/2 cup quinoa
- 8 falafel (homemade or store-bought)
- 4 tablespoons hummus
- 1 large carrot
- A piece of bell pepper
- A piece of cucumber
- A handful of red cabbage, shredded
- A few cherry tomatoes, halved
- Chives, chopped
