Falafel Quinoa Bowl with Green Sauce

Ingredients
  

Bowl
  • 1/2 cup quinoa
  • 8 falafel homemade or store-bought
  • 4 tbsp hummus
  • 1 large carrot
  • a piece of bell pepper
  • a piece of cucumber
  • a handful of red cabbage shredded
  • a few cherry tomatoes halved
  • chives chopped
Green sauce
  • 3 tbsp skyr or Greek yogurt
  • 1 tbsp mayonnaise
  • a handful of fresh herbs parsley, dill, spinach, or basil—or a mix
  • 1 tbsp nutritional yeast
  • salt to taste

Method
 

  1. Cook the quinoa according to package instructions and let it cool slightly.
  2. Cut the carrot, cucumber, and bell pepper into sticks. Shred the red cabbage, halve the cherry tomatoes, and chop the chives.
  3. Arrange the quinoa, falafel, hummus, and all the vegetables in a bowl.
  4. Blend all the green sauce ingredients until smooth and creamy.
  5. Drizzle the sauce over the bowl just before serving.
